Making Khajur Burfi Ladoo-Shaped Dates Nuts Seeds and Dried Fruits Energy Balls

I recently received rectangular cube shaped Khajur Burfis for the Diwali festival here in Mauritius and enjoyed it so much that I was craving for more! Before making the recipe below, I saw similar versions of these sold in the organic section of the supermarket labeled as energy balls that come with different ingredients such as coconut and peas protein or fruit seeds. All having the same base, that is “Khajur” which means the date fruit. Depending if you have any food intolerance and allergies, you can adapt this recipe and omit. You can also vary the dried fruits you use. A lot of variations are possible! This gives rooms to a lot of creativity!
In discussion with my nutritionist, she recommends I consume these as they make a great snack during the day when I have cravings.
After making my first Khajur Burfi Ladoos (I call them ladoos because I made them ball shaped – if there are other names, please let me know in the comments section.) I realised that the dates you pick will also play a great role on the taste. I used medjool dates from Iran purchased at Neofoods and do also have some deglet noor dates at home which I got from Super U. Other dates recommended are mazafati dates and ajwa dates.
Ingredients used:
Medjool Dates
Macadamia and Almond Nut Butter
Coconut Oil
Ghee
Orange
Peanuts
Pistachios
Almonds
Cashew Nuts
Chia Seeds
Dried Raisins
Dried Goji berries
Cardamon powder
Salt
I am a great fan of ratios. Finding the right ratios and noting them down allows for repeating the same recipe and having a more or less consistent taste. Of course your taste buds will also be key to determine which is your own preferred ratio. It doesn’t always have to be precise to the gram, it offers a good guideline. Some ingredients require more precision, like the amount of cardamon powder you will add.

Steps for 250g of Dates
1. Crush 100g of nuts.
2. Press oranges. You’ll need 30-45ml.
3. Put dates in blending jar with orange juice, add a tablespoon ( which I call a soup spoon) of almond macadamia nut butter and a tablespoon of coconut oil. Blend it into a paste. A tablespoon can usually hold 15g/15ml of volume.
4. Roast the nuts, seeds and dried fruits with ghee butter for a few mins. Remove from pan.
5. Use same pan with some more ghee and warm up the dates paste. Then put aside to cool down for a few mins. Add some cardamon powder and salt. Just a pinch will do.
6. Mix it all together in a bowl until it becomes a well mixed lump.
7. Roll into balls (ladoos). You can add some coconut oil on your hands if the paste is too sticky.
8. In my photos you can see that my ladoo shaped khajur burfis aren’t polished and shiny looking, you can add a coating of ghee, it will also make it less sticky when you store it in a food container in the fridge.
